This dish appears to be pasta in a light cream or cheese sauce, but is meant for a fish-day and is dairy free. I left out the saffron when I made it (called for in the original) because it was being served with a number of dishes that also used saffron. Instead I seasoned it with ground coriander (used whole and candied in the original for a garnish).
Ingredients
1 pound lasagna noodles, cooked
3 cups almond milk
1 tsp. coriander
2 tsp. sugar
1/2 tsp. salt
Method
Bring almond milk to a boil, reduce heat and simmer. Add coriander, sugar, and salt. Cook until thick, stirring often. Pour over noodles, mix and serve.
